So here are our top tips when it comes to cooking steak.

Get your steaks out of the fridge nice and early, preferably up to an hour before cooking and have your plates warming. By doing this, you’ll bring your steak towards ambient temperature and they will react much better to the high heat of your pan.

Before cooking, rub your steak with an oil that has a high flashpoint, such as vegetable or rapeseed oil. Season both sides with salt and pepper, doing so up to 20 minutes before cooking will ensure the moisture does not draw out of your steaks.

Next, preheat a heavy pan on your hob for at least 5 minutes on medium to high heat – you don’t want anything to burn. If your steak is really thick, lower the temperature slightly and continue to cook for a little longer. When the pan is hot enough, place your steaks in and start a timer. This is the important bit, as it really helps to know how long exactly you’ve been cooking your steaks for.

Cooking times per side based on “average” thickness:

  • Rare: 2 minutes
  • Medium rare: 2.30 to 3 minutes
  • Medium: 4 minutes
  • Well done: 5-6 minutes

Pop a good knob of butter onto your steak once turned, it will melt into the pan and can be used to baste your steaks, just grab a spoon and carefully tilt your pan.

When your steak has finished cooking, it is really important that you rest your steak for as long as it was cooked on your warmed plate, adding more seasoning if required. The steak will continue cooking a little while being rested.
