Our topside of grass-fed Herefordshire beef is one of our best sellers, and is a great roasting joint.
Sourced just 29 food miles away from our Ewyas Harold plant, our Hereford beef comes from Willersley Court Farm, the native breed is known for its ability to convert grass into rich, flavorful, and nutrient-dense beef. The topside is a lean cut, cut from the top of the hindquarter and best when served pink.

Remove from the fridge and allow the topside to come to room temperature.
Remove all packaging and pat dry with kitchen paper.
When using a conventional oven, preheat to 200ºC.
Season with fine sea salt, and rub all over with a little olive oil.
Put the oven for 10-minutes.
Reduce the heat to 145ºC and then cook for a further 20-minutes per 500g, and add an extra 10-minutes at the end.
Remove from the oven and rest for at least 45-minutes before carving.
Carve against the grain, and serve at your preferred thickness.
