Valentine’s Day is a special day to celebrate with someone close to you. We know lots of you will be cooking a romantic steak dinner for two, so this year, why not try and step it up with our 28-day dry-aged grass-fed Hereford Tomahawk Sharing Steak for 2?

The Hereford Beef for our Tomahawk Steak comes directly from Jonny Morris, only 29 food miles away from our Ewyas Harold plant. The Hereford cattle are a native breed that has developed on the natural offerings of the UK countryside, converting the grass we grow into high-quality, nutrient-dense beef.

Slowly converting grass, alongside their less flighty, docile nature, gives a distinctive timbre of beef that is both very tender with a good covering of fat and marbling throughout all cuts. This fat contributes to much of the flavour in our Tomahawk Steak, making it a really delicious cut of meat. The covering associated with Hereford cattle also lends itself well to being dry aged, as it acts as a protective barrier while ageing on the hook as a forequarter and hindquarter and then into primal cuts.

Create a delicious and memorable steak dinner for your significant other using one of these fantastic primal cuts and the following recipe:

  1. Make sure you remove your Tomahawk Steak from the fridge 1 hour before cooking
  2. Apply oil and season really well with sea salt and freshly ground black pepper
  3. Preheat your oven to 180 degrees C
  4. On your stove, heat up an oven-proof pan to a high heat. To ensure the pan is properly up to temperature, heat it up for at least 5 minutes ( You may want to open some windows / get some ventilation going. This will be a smoky process!)
  5. Place the steak into the pan and cook for 4 minutes on each side
  6. Place a hearty knob of butter on top of the steak; this will melt into the pan. Baste a couple of times by angling the pan and spooning onto the steak
  7. If you want your steak rare, also known as blue, now is the time to place your steak onto a warm plate and rest for 10 minutes
  8. If you want to cook your steak for longer, put the oven-proof pan into the oven for:
    Medium rare: 5 minutes
    Medium: 7 minutes
    Medium well: 10 minutes
    Well done: 15 minutes
  9. After your chosen cooking time, remove the steak from the oven and rest well on a warm plate for 10 minutes
